Wine industry in Bulgaria has been in recent years undergoing far reaching modernization. Grapes are harvested with combine harvesters which together with modern transportation means reduce the length of vintage. Grapes are processed on standardized production lines, continuous fermentation is used on a steadily increasing scale in processing both red and white wine, plate and drippling filters replace obsolete types. Three special plants were built for stabilization, bottling, labelling and packing operations. Strict sterilization is observed throughout bottling. Cold bottling is typical for white wine, whereas both cold and hot bottling is used with red wine. New plants are characterized by complex automation. Storing capacities are enlarged by building well insulated outdoor tanks.
