Selecting proper strain of brewer's yeast.Peer-reviewed article

In the first part of the article the authoress specifies properties characterizing various strains of brewer's yeast and permitting to select strain meeting concrete requirements. The second parts deals with the typification of strains cultivated in the collection of the Research Institute of Brewing and Malting Industry. Classification is based on the results of laboratory tests, usage in pilot plant and in breweries on an industrial scale.
