New methods have recently been elaborated how - by using alkaline or catalytic process - to prepare on an industrial scale isomerized hop extracts from hop resins. Such extracts are used for the so-called cold hopping carried out in the finishing stages of the brewing process, i. e. during filtering or racking operations. One of the outstanding problems is now therefore reliable analytic determination of the properties of new extracts. The authors have compared four analytic methods using as samples a number of alkaline isomerates (after partial isomerization) and a Belgian preparation called Isopal. Advantages and disadvantages of the methods in question are evaluated and kinds of extracts indicated, to the analyses of which individual methods can be applied.
