A brief review of factors influencing foaming tendencies and methods of a foam destroying using in fermenters are given. Additions of surfactants into a cultivation medium to suppress the foam formation significantly affects the oxygen transfer rate from a gaseous to a liquid phase. In the experimental study the effect of the antifoam concentration Struktol OSH on changes in the oxygen transfer rate and foam stability during a batch culture of bacteria was tested.
