Drying bakery yeast in fluidized bed.Peer-reviewed article

The article deals with the results of laboratory yeast drying experiments, with hydrodynamics and specific properties of fluidized bed, as well as with kinetic and thermal conditions of drying. The author analyses the influence of individual factors on drying process and outlines method to be applied to obtain a correct drying rate curve. Continuous and semi-continuous drying processes are compared and evaluated. A pilot plant of 100 kg/hr dry yeast capacity and achieved results are described.
