The possibility of utilization of standard tests with chromogenic substrates was followed by comparing various methods for the determination of activity of amylolytic enzymes in the brewing laboratories. The experiments revealed that the series of ,,Amylochrome Roche" and ,,Phadebas Amylase Test", which determines the amylase activity in using chromogenic substrates, are sufficiently precise, sensitive, and suitable for current application in brewery laboratories. In order to differentiate the α- and β-amylase activity, it is necessary to use another method.
