The effect of an activator of Botrytis cinerea on the Saccharomyces yeast strain isolated from Lowkarpat viticultural area in 1979 and 1980 was tested. The addition of 50 mg of the activator per liter resulted in an increased activity of the must fermentation during the 2nd and 3rd day after the inoculation. The presence of the activator resulted in a lower formation of volatile acids. This is one of the most important parameters describing the quality of a wine produced.
