A brief review of biochemical properties and genetic specification of enzyme systems that are responsible for a transport and hydrolyzes of maltose in yeasts is made. A control of the maltose-permease system by induction, catabolite repression and catabolite inactivation as well as control of a-glukosidase by induction and glucose repression is described. A discussion of the genetic MAL system and the isolation and cloning of the structural gene for maltase is made. A genetic and physical analysis of defined MAL strains and a possible evolutional origin of the individual MAL genes is described.
