The methods for beta-glucanase determination of barley and malt.Peer-reviewed article

Various methods for the determination of endo-b-glucanase activity are described in a brief literature review. For the use and verification the MEBAK method, using both the Novo substrate as well as b-glucane prepared in Research Institute of Brewing and Malting, was chosen. The method is described in details. The results showed that for a comparison of the values among laboratories it is necessary to use the same method, the same substrate, to keep strictly the conditions of the method and the results must be correlated with respect to the standard malt. For the research needs it is possible to use substrate of its own production, however of the same batch with the same specific viscosity for a whole group of experiments. From the results it was calculated the very high negative activity dependence of b-glucanace on viscosity and on the flour-grist difference.
