The first part of the contribution is devoted to characteristics of the American brewing market and to the quality requirements for basic raw-materials in theU.S.A.The technology is described according to the production flow. The usual procedures and apparatures used in a brewhouse are discussed. The preparation of concentrated worts for high gravity brewing is described.
