A brief review of practical knowledges obtained in the Wine-Making-Plant in Nitra-Luľianky from the production of natural wines for export and during the stabilization of old and heavy wines is mentioned. The demands for the grapes are described in the introduction. Further, characteristics of physico-chemical methods of the stabilization - using heat, refrigeration and membrane filtration - are described. The high significance of the sulphurization regardless to the physical stabilization was proved. At the end, the effect of biopolymers on the formation of the sediments or the lower clearity of wine resulting from a longer storage are evaluated.
