Synthesis of yeast ergosterol can be increased both by selection of suitable strains and by interference with fermentation technology. The later approach may cause an excessively high synthesis of ergosterol intermediates hampering its isolation. The ability to produce increased amounts of ergosterol was determined in Saccharomyces cerevisiae strains A22 and D7, the high production both biomass and ergostrol in strain D7 was tested also on an industrial scale. The best producers of ergostrol are selected strains of baker's yeast; the content of ergostrol in these strains exceeds several times that of hybrid baker's yeast, brewer's yeast fodder yeast.
