The isolation procedure of invertase from the supernatant fraction of autolysate was developed. The procedure also permits to obtain yeast extract, nucleotides, ergosterol, phospholipids, cell walls and glucans. The preparate of invertase has been tested in a confectionary, in a preparation of glucose-fructose syrup for bewerages and a bee-keeping as well as for a construction of the enzyme thermistor for the saccharose determination.
