Nitrite formation in innoculated hopped wort using m-phenylenediamine.Peer-reviewed article

The article describes the reaction of m-phenylenediamine (m-FDA) with nitrite which is formed via the reduction of nitrate by bacteria presented in hopped wort. m-FDA was added into innoculated hopped wort. This compound was bound with the nitrite. The final coloured compound that was formed in this reaction was measured at 450 nm. m-FDA suppressed neither the activity of the yeast nor that of the bacteria. The reaction was more intensive in higher m-FDA quantities, tower pH and with increasing nitrate concentration. The reaction can be used for a quick estimation of the bacteria presented in hopped wort, both in liquid and solid microbiological media.
