Cytolytic modification of malt secures disruption of cell wall grain and conditions even proteolytic modification and perfect hydrolysis of starch during mashing. It is considered for oné of the most important criteria of malt quality. Degree of malt modification is appraised in complexity according to average length of acrospices, mealiness, hectolitre weight, fme coarse grind difference, Kolbach index and extract 45 °C. Among the most used procedures belongs determination of malt modification by colouring methods. For determination of malt modification has been introduced the fluorescence method using fluorescence dye Calcofluor White. For evaluation was ušed the assembly of firm Haffmans Ltd.
