Polychlorinated biphenyls and polycyclic aromatic hydrocarbons in beer.Peer-reviewed article

Polychlorinated biphenyls and polycyclic aromatic hydrocarbons rank among significant contaminants of environment. While PCB have arisen by target industrial production, PAH abundance is, besides natural sources, given by imperfect combustion of mass. The consequence of considerable extention of these substances is their penetration into food chain. It is about very harmful to health substances which are characterized carcinogenic and immunotoxic effects in particular. From these reasons legislative regulations of the Czech republic, whose survey is included in this work, determine PCB and PAH maximal concentrations in individual types of waters and foodstuffs including beer. As regards PCB there is also discussed the presentation of results according to summary or congenery expression of results.
