German factory ZIEMANN has developed a new equipment- vacuum wort boiling plant - for wort boiling with the goal to reduce a primary energy and to increase a content of coagulable nitrogen (cN) and thiobarbituric acid figure (TBAF). This equipment consists of flash evaporator, vapour condensator, vacuum pump, this plant is connected via By - Pass with wort pipe line. Obtained results at the rate of evaporated water 4 - 5 % and vacuum 0,06MPa (abs.) showed appr. 50 % primary energy saving, further increased foam stability, and improved wort composition (cN content, TBAF, and the other parameter).
