The Quality of Barley From 2002 Crop - Brewery Section..Peer-reviewed article

M. HRABÁK, K. NIKOLAI, D. HRDLIČKOVÁ, J. PROKEŠ

It is already the fourth year that the brewing quality of barley crop has been assessed. The main topic of this article is the comparison of industrially brewed malts from different regions of the Czech Republic. The malts were compared by means of the classic technology in a semipilot experimental mini brewery. The attention was given especially to technological aspects and analytical differences of particular brews namely in both the intermediate product (hopped wort) and in the finished beer.In addition, the assessment of sensorial quality of beers and their reciprocal comparison was part and parcel of this process. No significant anomaly was discovered in any of the monitored variants. When compared with previous years, the malts prepared from the barleys of 2002 crop are more balanced. None of the monitored parameters of both the malt and wort or beer deviate from the normal values. It is already the fourth year that the brewing quality of barley crop has been assessed.
