The results of chromatographic analysis of raw spirit produced from corn, potatoes and molasses indicate, that if obtained from raw materials of average quality it contains the following esters: methyl acetate, ethyl acetate and isoamyl acetate. Further it contains the following alcohols: methyl alcohol, ethyl alcohol, propyl alcohol, isobutyl alcohol, isoamyl alcohol. No other esters or monovalent alcohols have been traced. From numerous technological problems arising in plants manufacturing high quality lactic acid designed for food industries, the complexometric method has been studied in its applications to the control of fermenting process and to the regulation of crystallization yield. The effect of epuration of mash has been verified by experiments as also the application of rotating vacuum filters to eliminate some difficult and labour-consuming operations.
