The results of experiments made on laboratory scale and repeated on a small production scale with extracting hop bitter substances from brewery sediments and crusts indicate that the method is both feasible and economical. Nevertheless it is necessary to check and verify the process on a larger production scale to clear the following points: a) Determine the most efficient method of drying the sediments. Study their durability and changes taking place in them during prolonged storing. b)Test the extracts from sediments in several brewing batches and study their effect upon taste and flavor of beer. c)Prepare an economic analysis based upon the results...
New methods of preparing ferments in alcohol distilleries.Peer-reviewed article
G. I. FERTMAN
Kvasny Prum. 1959; 5(5): 112-119 | DOI: 10.18832/kp1959011
The methods based upon the use of fermenting mash instead of fresh ferments have definitive advantages and should be therefore introduced everywhere, if the plant in question is so equipped that necessary amounts of fermenting mash can be introduced into the propagating vats by gravity or by some simple pumping set, which can be easily installed without undue costs. If no such facilities are provided, the ferments should be prepared by using sweet mash without additional malt feeding. It is necessary to check the quality of ferment periodically and introduce malt feeding later - if required - to improve its fermenting activity. From various methods...
Application of punched cards for recording the circulation of barrels and deliveries of beer.Peer-reviewed article

Kvasny Prum. 1959; 5(5): 119-124 | DOI: 10.18832/kp1959012
Correct recording of the circulation of barrels is an important problem, since large breweries have often in permanent circulation tens of thousand barrels representing a substantial part of their capital. To mechanize the recording system a new method based upon the use of perforated cards has been introduced by South-Boh. Breweries Nat.Corp. in České Budějovice. The scheme comprises: a) Systematic daily recording of circulating barrels indicating the outgoing and incoming quantities, specified according to types, as well as monthly balances at individual customers. b) Detailed statistics of beer deliveries specified to meet various criteria. Mechanised...
