Practical experience with malting in shifting heaps.Peer-reviewed article

The article presents partial results of technological and analytic evaluation of malt produced at three malting plants, which have recently been built inCzechoslovakiaand employ in their technological schemes shifting heaps. Despite initial troubles, resulting from the lack of necessary knowledge on the part of operators, and despite the necessity to compare and verify various modifications of basic technology, the quality of product was in every respect and consistently good. The results of analyses, applying mechanical and chemical criteria, are tabulated.(In Czech, English summary only)

The article deals with practical possibilities of improving some strains of yeast, important for fermenting industries, by applying normal genetic methods. The author concentrates his attention to the hybridization technique and to testing methods verifying the quality of new strains by comparing it with standards required in industry.(In Slovak, English summary only)

Aromatic substances in fermentation products.Peer-reviewed article

The article deals with the results of analyses of 4 sorts of white and 2 sorts of red wine, which explain to a certain degree the factors determining the proportions of free nitrogen and its amino form. Sixteen components have been isolated and identified by means of paper chromatography. Various methods were applied to ensure correct identification, as e. g. standard samples, comparison of Rf values, various development procedures, employing different developers etc. The presence of aliphatic amines of the C1 - C5 range, diamines and polyamines has been ascertained.(In Czech, English summary only)
