The article deals with the removing of fine sludge from sweet wort, experience with the application of this method and recent contribution to the knowledge of its effects. A special attention is paid to the relation between the sludge removing and fermentation process determining in its turn the arrangement of continuous lines in fermenting rooms. Specifications are given of several current types of sludge separators.(In Czech, English summary only)

Fort the third yeasr running the sugar beet molasses of Czechoslovak origin have been classified, by applying statistical methods, as raw material for manufacturing citric acid. Laboratory tests confirm a certain relation between the yield of the mentioned acid and the percentage of the £-amino nitrogen. No relation could be traced in the investigated samples between the percentage of the β amino nitrogen, volatile acids, pH and buffer indices.(In Czech, English summary only)
