A series of laboratory experiments have been carried out to trace the factors affecting the results of Weinfurtner tests of yeast propagating in fermentation cylinders. The form of curves showing the growth and sedimentation of five flocculating and non/flocculating strains permits to conclude that they depend on the diffusion of air trough the cover, composition of wort and slightly also on the proportion of sludge. The study covers several other problems, i.e. effects of selection, adaptation ability and changes taking place in strains continuously used in production processes.
