In the first part of the article the authoress specifies properties characterizing various strains of brewer's yeast and permitting to select strain meeting concrete requirements. The second parts deals with the typification of strains cultivated in the collection of the Research Institute of Brewing and Malting Industry. Classification is based on the results of laboratory tests, usage in pilot plant and in breweries on an industrial scale.(In Czech, English summary only)

The article deals with the toxic effects Cd ++ has upon lactic acid bacteria. Experiments strains carried out with 15 samples [ 8 strains of lactobacilli and 7 strains of pediococci] show conclusively that inhibiting effects of Cd ++ upon the growth of strains depend on the concentration of Mn ++ present in the medium. In medium containing MnSO4 the toxicity of Cd ++ is far more pronounced with pediococci than with lactobacilli.
