Substituting malt with barley without using enzymatic preparations.Peer-reviewed article

Taking into account the results of many trials carried out on a production scale the authors specify the limit to what malt can be substituted by unmalted barley without using enzymatic preparations. For technolog and organoleptic reasons they consider 20% [in standard malt equivalent] substitution as the highest permissible percentage having no negative effects upon the quality of final product, i.e. beer. Advantages and disadvantages of various methods, which can be used for processing unmalted barley prior to proper brewing, are compared and evaluated and optimum technology for all phases of brewing process recommended.(In Czech, English summary only)

The article deals with the cultivation of Candida utilis yeast in a mineral medium prepared of synthetic hydrogenated ethanol and containing various amounts of ammonium sulphate and urea as nitrogen sources. Having evaluated all relevant factors and processes as> growth rate of yeast, increase in yeast dry matter, speed of ethanol consumption and formation of its metabolic products }acetaldehyde, acetic acid and ethyl acetate], changes of pH taking place during fermentation in cultivation flasks of 500 ml capacity on a rotary shaking machine at 30 °C, the authors recommend for research of metabolism of Candida utilis under laboratory conditions...
