The first part of the article deals with history of production of machines and equipment for brewing industry which started in the ZVÚ Works at  Hradec Králové many years ago. In the presented study the authors followed the inhibition of thr amylase activity using riboflavin and the chelating agent. Conditions under which the a-amylase activiti is practically completely inhibited, while the β-amylase activity remains untouched, were also studied. A rapid and simple method of determination of α- and β-amylase activity in the malt was established. The metod is based on the inaktivation of α-amylase with riboflavin or Chelaton 3 solution (EDTA), is precise, rapid, and suitable for the determination of α- and β-amylase activity in the germinating barley,performed in control brewery laboratories....

The article deals with new methods which are to be introduced and applied and applied to evaluate the properties of malt. They include determination of malt extracts, colour, viskosity and attenuation degre of wort. Optimizing the Process of Manufacturing Fodder Yeast from Ethanol.Peer-reviewed article

The authors outline ways how to optimize conditions  required for manufacturing fodder yeast from ethanol. They have worked out a mathematical model of a plant producing yearly 25000 tons of fodder yeast and  analyze the effects of achieved yields upon manufacturing costs.  Optimum concentration values of biologic substance for various of isolation line  have been determined, too.(In Czech, English summary only)

The manufacturing program of ZVÚ N. C. Works at Hradec Králové includes several types of malt mills and covers practically all requirements of brewing industry.
