The article is essentially a survey covering roughly 100 sources dealing with the problem of dissolved air oxygen and is divided as follows: solubility of oxygen in wort and beer, methods used to measure the amount of dissolved oxygen (gasometry, colorimetry electrochemical methods, gas chromatography), oxygen in sweet wort, its role in fermentation processes, its effects on beer, changes taking place during filtration, bottling and casking, measures and devices reducing its concentration.(In Czech, English summary only)

Japanese brewing industry is a modern and well equipped branch of food industry and is characterized by the application of up-to-date technology and efficient utilization of all recent achievements of science. Despite general economic stagnation brewing industry thrives and many new breweries are being built. SinceJapanis short of necessary raw materials, it imports malt and hops fromCzechoslovakiaand is in this respect one of the biggest customers. Gel chromatography has been applied in a serial of experiments to isolate from molasses residues, remaining in distilleries, substances stimulating the growth of Candida utilis yeast. The Sephadex G-25 gel has been used to obtain several fractions characterized by different stimulating effects, but none of them original form. It has been established that the stimulating effects are by no means due to one single component, but to the combined influence of various substances, among which anorganic compounds have an important role. The article deals with the present manufacturing program of the ZVÚ Works at Hradec Králové, as well as with the development program covering new machines, plants and complete, modern breweries. The works supply up-to-date malt crushing plants, equipment for brewhouses, fermenting cellars, filtration stations etc. Modern installations bring economic advantages ensuring lower production costs and high quality of the final product. Specific capital investments related to the productivity of new equipment are low, much energy, raw materials and water can be saved and personnel reduced.(In Czech, English summary only)
