The article deals with the results of tests which have been carried out to study quantitative relation between the presence of harmful microbial contaminants and durability of beer. Yeast, lactobacilli and pediococci isolated from beer have been used in experiments and their propagation rates in 10° and 12° beer compared. Similar tests have been carried out with strains kept in the collection of Research Institute of Brewing and Malting Industries inPrague.(In Czech, English summary only)

By applying his own analytic method the author has identified in the first fraction of distillation process of molasses spirit 13 components with different boiling points ranging from 20,2 to 109,5 °C. Separation of these components in the rectification process is possible only under specific conditions, i. e. if the distillation of the first part is azeotropic and takes place at temperatures below the boiling point of ethanol and if the second part contains components boiling at higher temperatures and forming two- three- and four-component azeotropic mixtures boiling at temperature lower than that of the ethanol + water azeotrope. Crude synthetic ethanol contains some foreign matters which are harmful in applications, where ethanol is to be used as a source of carbon necessary for the growth of microorganisms. The authors have studied in the first line effects of contaminants which are frequently present in high concentrations. Though the results of fermentation tests fully confirm negative effects contaminants have upon the yields of yeast mass, it is extremely improbable that the concentration may be as high as to retard fermentation process or in an extreme case to stop it.
