In the first part a possible treatment of waste yeasts is discussed. The filtration properties of yeasts from a fermenting cellar and a stock cellar are described. In addition, an informative filtration time with a filter press is calculated. The conditions for a recycle of rest beer into hot hopped wort without alcohol losses and keeping a sterility are specified.(In Czech, English summary only)

The hydrolysis of lignocellulose wastes that occurred with a maize treatment using a mixture of hydrochloric acid and phosphoric acid in the ratio of 1 : 3 with the hydromodule of 1 : 5, was made on a laboratory scale. The hydrolyzates contain from 2 to 3 % wt of reducing compounds with the majority of D-xylose and D-glucose. The hydrolyzates were supplied with mineral salts and their pH value was increased with ammonium hydroxide. The hydrolyzates were used as a sole carbon and energy source for the yeast culture.
