Significance of polyphenolic compounds for protein precipitation during wort boiling.Peer-reviewed article

Effects of heat denaturation and "tannin power" of polyphenols on the protein precipitation during wort boiling were studied. The results show that even a relatively high dose of hop polyphenols has no higher effect on the protein precipitation. The same results were obtained with malts without anthocyanogenes, i. e. proteins that are probably high sensitive to the "tannin power" of hop polyphenols. From these results it can be concluded that the protein precipitation during wort boiling occurs mainly due to heat denaturation. Application of spectral data and computation methods for colour determination. II. Analysis of colorimetric characteristics of standards of EBC colour Scale.Peer-reviewed article

Colorimetric characteristics of the EBC colour scale are compared with the values computed from the spectra of colour discs of Hellige comparator and of Hartong solutions. A suitability of the application of individual types of colour coordinates for a correlation with the EBC scale are discussed. Using some examples it was proved that the spectrometric method developed by Suntory firm has to fail with the samples having a variable brightness. Some correlation procedures of colorimetric characteristics of samples with the EBC scale will be made in the next article.(In Czech, English summary only)

Productivity of algae in culture units with different configuration of radiation.Peer-reviewed article

From the standpoint of the productivity theoretical calculations prove a suitability of algae cultivations in units that are radiated from two or all sides. These configurations permit to achieve higher algae productivity than that with the radiation from one side only. There is also higher optical density necessary for an achievement of the maximum productivity in these cases. Therefore, a lower suspension volume for the separation is achieved and therefore, some production costs are saved.(In Czech, English summary only)
