Experiences with expert system application for beer production in cylindro-conical tanks.Peer-reviewed article

    J. VOTRUBA, Z. ŠTĚRBÁČEK, J. ŠAVEL, P. VOLF

    Kvasny Prum. 1993; 39(9): 257-261 | DOI: 10.18832/kp1993017

We have applied the expert system LISAP to analyze plant data resulting from CCT. Three examples are presented indicating its capabilities for predicting and optimizing process parameters - temperature and pressure. The model enables to find such values of control variables that ensure maximal rates of fermentation and decomposition of diacetyl and allied compounds.(In Czech, English summary only)

Enzyme activity of malt determination by direct methods.Peer-reviewed article

    J. ZEMEK, V. HOMOĽOVÁ

    Kvasny Prum. 1993; 39(9): 261-263 | DOI: 10.18832/kp1993018

The correlation resulting from comparison of enzyme activity determinations using tablets eS-Tests-Malt Amylase and Lichenase and the classical analytical methods such as the saccharification time, diastatic power and wort viscosity are described. The results obtained from 85 samples proved that for light malts of the pilsener type the suitab!e activity of α-amylase is from 220 to 530 μkat.kg-1 and of β-amylase from 100 to 1300 μkat.kg-1. There was found no linear plot between the endogenous activity of lichenase and the viscosity of congress wort.(In Czech, English summary only)
