The contribution offers principal information referring to international standardized system using EAN bar code (European Article Numbering), being a crossbred of theUSand Canadian UPC system (Universal Products Code), enjoying alongside it a most widespread application. By means of multi-staged screening of the Lactobacillus sample collections using shaker and fermentor, a most productive strain viewed from saccharose conversion to lactic acid and given process kinetics was selected -Lactobacillusplantarum 178. By optimizing medium composition and method applied for its nourishing, a reduction in medium components quantity from seven to five was attained, increasing at the same time substrates conversion per product up to 94% at medium production rate 2.4 g.l-1 .h-1.
