The method of spin trap PBN has proved itself worth by characterization of stability of beer samples. The spin trap PBN indicates, after certain inductive period by forced heat stress of beer sample at 60°C, breakage in stability with rapid growth of radical adduct PBN-X. This inductive period is beer stability margin. It has been shown, that the presence of oxygen has predominant influence on the course of ageing. With the respect of the production date, the declared shelf-life, the date of measurement and the determined time of thermic stability, we have worked out the method of charting, which enables reciprocal comparison and stability prognosis...

Kvasny Prum. 1999; 45(12): 317-320 | DOI: 10.18832/kp1999023

The method which enables to determine eleven aliphatic chlorocarbons (dichloromethane, 1,1-dichloroethane, 1,2-dichloroethane, trichloromethane, 1,1,1-trichloroethane, 1,1,2-trichloroethane, trichloroethylene, tetrachloroethylene, tetrachloromethane, 1,1,1,2-tetrachloroethane a 1,1,2,2-tetrachloroethane) by means of headspace technique combined with gas chromatography has been developed. The work deals with the determination of optimal conditions for headspace technique so in other that analysis itself was rapid, simple and at the same time results complied with legislative regulations given by the notice MH CR No.298/1997 Dig. The attention is given...
