The contribution of individual hop compounds to the total antioxidant activity was studied by HPLC method with CoulArray detection in broad scale of the potentials 250-900 mV. The compounds with the same electrochemical manners as epicatechin and catechin and oligomeric proanthocyanogens (OPCs) related to catechin were distinguished from the other compounds according to their electrochemical responses on lower potential (500 mV). The total content of these OPCs including catechin and epicatechin was determined as an equivalent of concentration of the catechin used as an external standard. Study evaluates malting barley quality in the Czech Republic from harvest 2010. Due to unfavorable weather conditions during harvest, biological, physiological damage and black tips occurred in barley. Barley had average protein content and slightly above average starch content. Most of the malt quality parameters achieved standard values. Higher wort haze and longer saccharification time were its problematic parameters. This article sets itself the goal of analysing selected financial aspects of three breweries on the Czech market - the two largest and one smaller brewery. 11 commonly used financial analysis ratios plus two supplementary ones were used to do so, these being the IN 01 bankruptcy model and the profitability ratio, which provides information on the financial profitability per unit of production in kind for the main product. Samples of two winter barley varieties from 14 testing stations were analyzed according to the standard ČSN 461100-5. Favorable weather in 2010 affected contents of nitrogenous substances (12.2 %) and starch (62.2 %) in winter barley caryopses. The occurrence of sprouted grains was small and the amount of damaged grains was low. Grain harvested in 2010 was larger and of the same size. Sieving fractions over 2.5 mm were on average 90.4 % in winter barley. Year 2010 was favorable in terms of barley grain quality.
