Three bottles of different beers were found in 2015 during a reconstruction of the brewery of the Raven Trading s.r.o. company in Záhlinice, Czech Republic. Good storage conditions enabled analysis of their original characteristics. All three bottles contained most probably lager type beer. First beer (bright, original extract 10.3%) had sulfuric and fecal off-flavors. The second beer (dark, original extract 7.6 %) was very acidic, resembling Lambic beer. DNA analysis proved the presence of lager yeast Saccharomyces pastorianus and contaminant Dekkera bruxellensis. The third beer (light brown, original extract 10.4%) contained small CO2...

This publication is a sequel to the study Microbiology of brewing - Lactic acid bacteria and cultivation methods for their detection (Matoulková and Kubizniaková, 2015: Kvasny Průmysl 61(3): 76-88). Growth was monitored in a set of 53 strains of Lactobacillus and Pediococcus on solidified culture media, e.g. MRS agar and its various modifications, the media Raka-Ray, NBB, UBA, etc. The study also included some liquid media. Photographic documentation is supplied of colonies of selected strains grown on different solid media. The real usefulness of the media in brewery plant laboratory was evaluated.

In the year 1895 was in the town Záhlinice founded very modern farmers brewery as the first one in Czech lands equipped with steam heated brew house. Four years later was erected malt plant. Due to consequences of World War I. and constant discrepancies among members of Brewery Board of Brewery was closed in the year 1921. The traditional floor malt plant is constantly in operation, this year in former lager cellars was opened a craft brewery.
