A sensory aging of beer occurs during the beer transport to a customer and its storage; this is due to irreversible chemical processes and is manifested by adverse change in the organoleptic character of the beer. Sensory beer aging results in the evolution of the old flavor of the beer, which is a combination of many foreign flavors and fragrances. In the second half of the 19th century there was in the Czech lands a stepwise transition from the smoke kiln to air kiln, so called. English design. The review article describes the risks of pathogenic bacteria transfer by drinking water and possible causes of drinking water contamination.In the past occurred several times a contamination of drinking water by pathogenic bacteria, caused mass illness with deaths.
