Malting is controlled germination of barley grain under certain conditions to the time of grain modification and it is a key process of the brewing and distilling industries. The aim of malting is to produce from barley malt containing the necessary enzymes, aroma and color substances needed for the production of a certain type of beer. Dough ability to produce leavening gas and its impact on bread crumb characteristics was evaluated on wheat, buckwheat and rice dough. The ability to produce leavening gas was recorded as thermally-dependent changes of dough volume; curve gradient, area under curve and the temperature range of leavening gas production were evaluated. The paper deals with the active sum of daily average air temperature above 5, 10, and 15 °C, and with the length of the vegetation season which is given by values of the daily average values of air temperature exceeding the given threshold (5, 10, 15 °C). The average values of four long-term periods (1931-1960, 1961-1990, 2021-2050, and 2071-2100) were compared to one another. A gradual increase of all the above mentioned characteristics was found. The article is focused on brewing and hospitality in Choceň (Chotzen, east part of Czech Republic) during World war I. All developments of beer prices, situations in beer pubs, contemporary limitations and restrictions on beer bars during the first world war were described. All information were gained from District State Archive in the town Ústí nad Orlicí (city chronicle in Choceň), further from the museum archive in Choceň (Orlické muzeum v Chocni).

In the year 1890 started Leopold Kašpar in small workshop in Senica in district Hana for the production of mill- and malt machinery. Six years later outside of the village he has erected big machinery factory. In the year 1919 he was forced to sell this factory to the society Mlynářská obchodní společnost, spol. s r.o. (Miller´s trade company Ltd), that succesfully produced till Big economic crisis. The production of mill- and malt machinery was finished at the start of Word War Nr. II, the manufacture of towing vehicles, trailers and semi-trailers continuous with success up to now.
