Calcium significance in brewing.Peer-reviewed article

The article comprises experimental results of calcium content in raw-materials and beer, its changes during malting and brewing, its effect on foaming, stability and sensorial properties of beer. The experiments proved the significance of this element especially at a lowering of pH of wort that can be achieved using mashing waters with higher sulphate concentrations or using the addition of calcium sulphate or calcium chloride, respectively.(In Czech, English summary only)

The turbidimeter SLP 3 developed byInstituteofBiotechnology,AcademyofSciences GDRand manufactured by VEB Exzellsior Werk Leipzig is described. The apparatus was used for a detection of clarity of filtrated beer by the kieselguhr filter HFN Destila. The results were compared with those obtained by the turbidimeter Sigrist (Switzerland). The correlation and good reproducibility resultred from the evaluation of the results.(In Czech, English summary only)

The function of combined waste water treatment plant in baker's yeast factory in Józefow inPolandis described. Isolation of mutants producing lysine in medium with molasses.Peer-reviewed article

A mutant of Brevibacterium flavum resistant to bacitracine, was isolated. The mutant accumulated 37 g . l-1 lysine after 72 hours of cultivation in medium containing molasses as a source of carbon.(In Czech, English summary only)
