The article informs the Czechoslovak brewing community about the results of the development of wheat beers inCzechoslovakia. The verification of the proposed production technology of wheat beer of the Bavarian type is described. Liquid agents for washing have several advantages in comparison to solid ones. The liquid preparate for washing of glass bottles has been developed in Tonaso Neštěmice and was called Alko T 12. The preparate was tested on a laboratory scale as well as on an industrial scale with good results. The following parameters were determined: the efficiency of washing and ungreasing, the plot of the conductivity of Alkon T 12 solutions on its concentration and temperature and its disinfection effect. In he sample with the anthocyanin concentration of 15.38 mg.l-1 the decrease of pigment after 31 days of storage was about 17.36 %. The value of the degradation index increased in storaged sample from 1.0384 to 1.0637. A period of the half decomposition t1/2 was 210.27 days in the sample tested. The kinetic study of the anthocyanin decomposition in the cherry beverage revealed the kinetic of the third order. The course of the colour differences determined on Momcolor apparatus showed no significant change in the proper colour. Only a decrease of a deed and clearance of the colour has been determined.(In Slovak, English summary only)
