A brief review of methods that are used for the checking of the colloidal stability of beer is mentioned. Further, a procedure of  "the model stabilizing filtration" which permits an evaluation of adsorption stabilizing compounds under strictly defined conditions comparable with those at the plant application is described. This procedure permits to prepare up to 30 bottles of coloidaly stabilized beer for an analytical and sensorial evaluation. The fermentation properties of 11 yeast strains from the Czechoslovak collection of Yeasts inBratislavawere tested. These strains belong to brewing, wine-making, distillery and genetically manipulated yeasts. The aim of the study was to find the strain with maximum productivity of ethanol production from glucose and maltose resulting from starch degradation. Criteria for the selection were as follows: fermentation tests, courses and yields of alcohol fermentation under limited aerobic conditions, the effect of yeast autolysate addition on ethanol yields and the respiration activity.(In Slovak, English summary only)
