    Sedimentative and turbidimetric assessment of yeast concentration.Peer-reviewed article

    Pitching yeast concentration is assessed by standard centrifugation of yeast for 10 min    (3000 r.p.m) in flat-bottomed glass cells. Relative yeast concentration is expressed as sediment volume fraction on sample total volume, read after centrifugation. For turbidimetric yeast assessment, 0,4 ml of 20% NaOH was added to 4 ml sample containing fermented hopped wort, fermenting or secondary fermented beer; after stirring-up an absorbance value was measured at 800 nm. NaOH activity effects sludge dissolution contained in hopped wort and beer.(In Czech, English summary only)

    The results of submitted work refer to availability of the es-test inulinase for inulinase enzyme activity assessment, even when ß-D-fructofuranosidase (invertase) is presented. The eS-test inulinase thus completes standard methods used for activity assessment of biotechnologically significant hydrolases.(In Czech, English summary only)
