The author discusses the influence causing indistinct results in the difference between the amount of extract determined by means of analysis of malt and the amount of extract gained in the brewhouse, as calculated from the volume and concentration of produced wort. The correct determination of the losses "between the laboratory and brewhouse" is influenced, as far as the consumption of malt is concerned, by the sampling of malt, by the permitted swing in the determination of extract, by the method of calculation of extract, as well as the different methods of its determination made in the laboratory and in the factory. Special attention is drawn to the calculation of brewing effect. The results obtained according to Windisch formula are compared with those according to Bleisch and Lintner.
