The article deals with the first so far known example of new application of polarographic methods, viz. for ascertaining the stage of proteolysis in green malt. Various samples of germinating barley processed, i. e. cryied, crushed and extracted in the same way, have been studied, Different stages of proteolysis are reflected in the polarographic maximum of cobalt.
