Predicting colloidal stability of beer.Peer-reviewed article

The article deals with a simplified, rapid shock test, the results of which permit to predict the colloidal stability of beer. The reliability of the method can be seen from the comparison with other known methods. The author has elaborated a new method for evaluating the clarity of sweet congress wort based on a scale of turbidity units measured with nephelometers, as well as for evaluating the clarity of the samples of first wort indicating the efficiency of straining.
