The authors evaluate the efficiency and technological advantages of a new pilot plant which has been developed for continuous decoction mashing. The inventors of the plant are J. Dyr and J.Moštek and its design is patended inCzechoslovakiaunder No. 135 168. The capacity of the pilot plant is approx.500 lof 10° wort per hour. The wort prepared in the new plant characterized by higher percentage of fermentable saccharadides, especially of maltose, nitrogen compounds, Lundin B and C nitrogenous fractions, a - amino nitrogen, inositol and iso- a-bitter acids [Klopper]. As compared with conventional technology the yield is the same or higher.
