A brief history of Saccharomyces sensu stricto.Peer-reviewed article

The authors briefly reconstructed the 150 year's history of classification of yeasts connected with wine and beer production known as the sensu stricto group of the genus Saccharomyces. Possible consequences of a correct or incorrect classification of these with wine and beer-associated yeasts which arise in relation with their use in the past, as well as at present or in the future, are elucidated from the point of view of importance for research and biotechnology.
