Assessment of biogenic amines in beer.Peer-reviewed article

Method is described for biogenic amines assessment in beer, outgoing from isocratic HPLC N-substituted benzamides separation. Yields gained from applied matrix extraction method attained at Putrescin 95,4 %, Cadaverine 89,5 %, Tryptamine 101,8 %, Histamine 88,7 % and Tyramine 93,2 %. The method is considered as rapid, sufficiently sensitive and is significant by good assessment repeatability.
