Flow cytometry is an optical method. Results obtained by this method contain different information about particles with very small diameters (micron and submicron particles) in solution. This method is usual applied to evaluation of growth and morphological characteristics of cell populations included their intracellular components and compounds. There are several papers dealing with application of flow cytometry to brewing yeast cells. We can monitor and control dynamics of yeast cell growth and metabolism by flow cytometry and we can more detailed descript brewing fermentation and yeast pitching.We can use also fluorescent staining for some specific components and substances. We analysed samples of beer hazes by these methods. We measured number of haze particles, their diameters and distribution. As beer haze consist particles, which contain also several substances we tried to apply fluorescent staining for characterization of beer hazes. We applied also fluorescent microscopy for characterization of beer hazes consist from particles with the greater diameters. We used FITC, Fluostain I and Fura-2 for staining of particles. These dyes were fluorescent specific bounded to proteins, phenolic substances and calcium.Flow cytometry is an optical method.
