Intensifying fermentation processes in chilled and filtered musts.Peer-reviewed article

The author recommends to remove the sediment from musts pressed on electric continuous presses and must from diseased wine - mechanically by filtration and pitching with cultivated yeasts with addition of sterile kieselguhr.
