The article deals with the nature of processes typical for aerobic fermentation and resulting in an intensive generation of foam, as well as with various conventional defoaming methods. The results of experimental research works, which have been recently carried out, indicate that defoaming costs can be substantially reduced by using modern silicone defoamers or emulsions of defoaming oils and by installing in plants making feed or bakery yeast automatic dispensing devices metering the mentioned defoamers.
